Reciple of the Week: Blueberry French Toast

I know it is St. Patrick’s Day and I should be posting something green. But I promised you a french toast recipe, so here it is! I also just loved this breakfast (or lunch or dinner or snack) so much that I wanted to eat it again! 🙂

I got this recipe from Tara Stiles, who is a kick ass yoga teacher at Strala Yoga in NYC. It’s vegan, but you wouldn’t know the difference.

What you will need for this recipe is:

-4 slices of Ezekiel Bread (I used low sodium, which was a mistake. Get the Cinnamon Raisin and I’m sure your mind will be blown) *see below

-One banana

-Handful of Blueberries

-1/2 a cup of non-dairy milk (I used Almond Milk)prep

-Dash of Cinnamon

-Teaspoon of Pure Vanilla Extract

-Coconut Oil for the pan

I bet you are wondering where we are going to get the batter from (“But what about the EGGS!”). Don’t worry the banana, almond milk, and blueberries have it covered!

Place the banana, almond milk, blueberries, cinnamon, and vanilla extract in a blender and blend until smooth. Pour the mixture into a bowl, this is your batter so make sure the bowl is big enough for you to dip the bread in!

Get your pan ready by putting it over medium heat with a tablespoon of coconut oil. If you absolutely have to use butter to grease your pan then that is perfectly fine! But make sure you use the real stuff, not I Can’t Believe It’s Not Butter (what is it then??) or Pam! Those things are FULL of chemicals and other really gross things that should never enter the human body.

Once hot, dip your piece of Ezekiel bread into the batter. Submerge it so that every part of it is covered in batter. Then put it on the skillet. You want your toast to be browned on both sides, so keep flipping the toast until this is achieved.

Repeat with the remaining pieces of bread. And you are ready to dig in to a stack of deliciousness!

I tend to top mine with strawberries and all natural maple syrup. But there are many, many options! You can top them with dark chocolate chips, bananas, or more blueberries.  What about making them “stuffed” with peanut butter and bananas then throwing them back on the skillet? Whoa…

This breakfast is great for those slow weekend mornings and could make a great addition to a brunch you may be hosting. It’s so easy to make, doesn’t take too much time, and its fun to cook yourself decadent meals like this that you may not cook everyday! Treat yo’self!!

*What is Ezekiel Bread? Ezekiel bread is a mixture of sprouted wheat, spelt, barley, lentils, soybeans, and millet. It is an excellent source of protein, vitamin c, b, and includes 18 amino acids. This bread can usually be found in the frozen food section of a grocery store or health foods store. The brand is usually Food for Life and they also carry english muffins and wraps. This bread is a great way to incorporate more grains into your diet. And because it is sprouted it makes digestibility easier and aids the absorption of the vitamins and minerals.
