Recipe Of The Week: Banana Mango Chia Soft Serve

This recipe was inspired by something I saw on Instagram this morning. The person, who was from Australia, posted a picture of Banana Mango Chia Pudding and my mouth immediately started watering. Although it is still cold here in New York that combination sounded so refreshing I just had to try and make it myself.

I opted for more of a sorbet than a pudding. I am very familiar to freezing bananas and making peanut butter soft serve out of them so i thought why not use the same method for this recipe?

What you will need:

1 ripe mango

1 ripe banana

1 tablespoon of chia seeds

Blender or food processor

Yup, that’s it.

Directions:

I would recommend freezing your banana and mango at least 10 hours ahead of time. I only froze them for about 4 hours and it still worked out great, but more time in the freezer is optimal.

To freeze your fruits simply peel and slice them then store them in sandwich bags before placing them in the freezer. Once they are frozen you can get blending or processing!

Place the banana and mango in the blender first. If the blender is having difficulty blending through the fruit drizzle a little water to help it along. Once it becomes creamy you can add your chia seeds then blend until completely incorporated.

Ta Da! Banana Mango Chia Soft Serve! This went perfect with my quick and easy oatmeal cookie and oh my was it refreshing. This will definitely become a staple for the warmer months. If you have extra (which you probably will not 😉 put the rest in a container and put in the freezer for tomorrow.
