I love Fall. Although the leaves are falling off the trees and the temperatures are dropping it signifies something so much more. Getting rid of the old and preparing for the new.
I also love food in the fall. The rich flavors, the succulent aromas, the comfort. Food in the fall just makes you feel better. From soups, root vegetables, teas, spices; the opportunities are endless.
Last night was one of those nights of “What do I have in the refrigerator and what can I make with it” kinds of nights. Instead of reaching for a can of Amy’s Black Bean Soup which I had planned, I decided to make a Fall Veggie Dish. In the freezer I had brussel sprouts, butternut squash, and asparagus. As I was sauteing and steaming these beautiful pieces of nature in coconut oil I felt like something was missing. I spotted a big white onion out of the corner of my eye. Perfection. Sauteed onions make everything better!
As I was dicing and throwing the onion into the pan another light bulb went off, my inner voice said (as it usually does) “this would be really good with cinnamon”.
Cinnamon is a beautiful spice and holds so many benefits such as:

Not only does it hold all of those benefits but it also tastes good and pretty much on ANYTHING! Put it in coffee, tea, oatmeal, cereal, on a toasted piece of Ezekiel bread with coconut oil, in soups…I mean, seriously, I really could go on. And I must say that the onions were OUT OF THIS WORLD.
